Ingredients:
Fresh morels
Onions
Rice
White wine
Broth
Cream
Parmesan cheese

Preparation:
Wash the fresh morels to remove any dirt and impurities, then thinly slice and set aside.
Mince the onion and set aside.
Prepare the stock.
Sauté the morel mushroom risotto:
Melt the cream in a hot pan and add the onions and saute until transparent.
Add the rice and sauté until golden brown.
Pour in the white wine and when the rice has absorbed it, add the stock and cook over low heat until the rice is tender.
Add the chopped morels and continue to cook until the morels are cooked through.
Finally add the Parmesan cheese, salt and pepper and season with herbs.
Plate:
Serve the cooked risotto on a platter and you can sprinkle it with some extra parmesan cheese and herbs.
